GraSP Project: Innovative Development of Functional Food from Prokupac Grape Skins

Researchers from the Institute for Information Technologies and the Faculty of Medicine at the University of Kragujevac, in addition to the project within the “PROMIS 2023” program, have also been approved for funding of a project under the “Proof of Concept” program.

The project “Unleashing Nature’s Potential: Development of Additive-Free Prokupac Grape Skin Topping as Functional Food” (acronym GraSP) is conducted under the auspices of the Science Fund of the Republic of Serbia through the “Proof of Concept” program and involves collaboration of scientists from the Institute for Information Technologies, Faculty of Medicine at the University of Kragujevac, and the Faculty of Physical Chemistry at the University of Belgrade. The project aims to develop an entirely new food product from grape skins, which are considered waste in Serbia’s wine industry. The resulting product is an example of functional food rich in antioxidants and free from additives. Due to its beneficial properties, it can significantly help with weakened immune systems and contribute to health preservation.

The importance of the project lies in reducing waste from Serbia’s wine industry, supporting the principles of circular economy, as well as in developing a healthy, completely natural product that retains all active components. This is also an opportunity for scientists to participate in applied research and enhance their knowledge in medicine and natural product chemistry, presenting it to users through an innovative product.

Obtaining funds through the PROMIS 2023 project, as well as through the project within the Proof of Concept call, demonstrates the significance and potential of research work by scientists at the University of Kragujevac. These projects provide significant opportunities for advancing research and developing innovations in the fields of chemistry, pharmacy, and medicine.
